Yes and no. Hindi movies are made in many different dialects depending on which part of the HIndi speaking belt each movie is based in. However, if you learn basic conversational Hindi, which is 'Hindustani, you can certainly understand the majority of on-screen conversations without needing to understand every word. In time, the more variety of movies you watch, the easier it will be to absorb the various Hindi dialects instinctively.
It will take a fair measure of learning the 'Khari Boli' dialect to understand Parliamentary proceedings, which are primarily conducted in this dialect with sparse use of Urdu and English.
